Rustic Bread

This rustic bread recipe is absolutely delightful, customizable, and most importantly EASY. For any time of year, pair this along with soups, or turn into a grilled cheese sandwich for a satisfying meal.


This bread recipe is easy enough for beginners, and simple enough that more seasoned bakers can add a nice cinnamon butter or garlic spread (depending on seasoning used in the bread).

Rustic Bread


Ingredients:

-3 cups all purpose flour (425g) (10-12%

protein

-1/4 cup whole wheat flour (35g)

-2 tsp kosher salt (6g)

-1 3/4 tsp instant yeast (5.25g)

-2 cups room temperature water

-minced garlic

-fresh herb (rosemary)


Directions:

  1. In a large bowl, whisk flours, salt, garlic, herbs, and yeast until combined.

  2. Add water and mix until everything is

  3. Scrape down the sides of the bowl and cover with plastic wrap.

  4. Let rise on the counter for 5 hours.

  5. Heavily flour your hands and a clean surface.Don't be shy with the flour here! Transfer the dough to the heavily floured surface

  6. Shape dough by folding the side of the dough closest to you up, and then each side of the dough in towards each other. Next, fold the farthest side of the dough in towards yourself.

  7. Using cupped hands, shape the dough into a tight uniform ball.

  8. Flour the top of the loaf all over. Lightly place a piece of plastic wrap over the loaf and let rest 30 minutes.

  9. While the loaf rests, preheat your oven to 450F, with a cast iron dutch oven inside.

  10. Once the dough has rested, do a quick re-shape with cupped hands if desired. Removethe cast iron from the oven. Transfer dough to the hot cast iron. Score loaf as desired.

  11. Cover with cast iron lid and place back into the oven. Bake for 30 minutes.

  12. Carefully remove lid from cast iron and return bread to the oven to finish browning and cooking. This next baking step will take about 10-15 minutes depending on how brown you

  13. Remove bread from oven and carefully transfer to a wire rack to cool.

  14. Cool at least 20 minutes before slicing into the loaf!
